Is Ramen made with seed oils?

Depends

Depends on the shop

A good tonkotsu or shoyu broth is mostly rendered pork or chicken fat, but many shops finish bowls with a seasoned oil (mayu) made from vegetable oil, and the chashu is often seared in it too. A large bowl is estimated at about 4g of seed oil PUFA.

How to keep it seed-oil-free

Ask what the seasoning oil is made from, or order a broth-forward bowl and skip extra oil toppings.
